Iconic bar and restaurant Trader Vic’s is collaborating with Vanessa Bolosier, author of Creole Kitchen, to create an exotic sunshine-inspired pop-up menu – launching with an exclusive event on Friday 14th July.

Situated within the flagship London Hilton on Park Lane in Mayfair, Trader Vic’s latest offering is part of the Island fusion menu series; combining their signature flavours with exciting tastes from a whole host of Caribbean and African islands.

Influenced by her childhood years spent in the island paradise of the Caribbean, self-confessed foodie Vanessa’s cooking draws upon the rich cultural history of the islands of Guadeloupe and Martinique.

Trader Vic’s Executive Chef Shiran Fonseka has partnered with Vanessa to curate an exciting fusion of flavours from the French Caribbean and Polynesian cuisines.

Designed to give taste-buds a treat, the mouth-watering pop-up menu features three starters, three mains and three deserts – with three courses available for only £29 per person.

Starters include the refreshing christophine salad with Creole avocado cream and coconut slaw, and red mullet Creole court bouillon served with plantain and sweet potato features for the main event. To finish off with something little sweeter, guests can savour flambé banana with coconut ice cream.

What’s more, for food lovers dining in pairs, there is also a deliciously tempting two-person sharing platter available for just £19 featuring stuffed crabs, saltfish fritters and green mango souskai.

The launch event will offer something for everyone to enjoy, with live music and a DJ keeping the rhythm pumping. Trader Vic’s tropical cocktails will provide the perfect pairing to the pop-up menu, with an extensive range available from just £5.50.

Shiran commented: “We are incredibly proud to launch our exotic new pop-menu, and we look forward to welcoming guests to the party Friday 14th July. In working with Vanessa to create this special collection of dishes, transporting diners to a tropical paradise through tantalising tastes was a top priority.”

The pop-up menu at Trader Vic’s will be available until 11th August.

Kicking-off at 6.30pm, entry to the launch event on Friday 14th July is on a first come, first served basis. Up until 9.30pm entry is free, and is £10 on the door thereafter.
